Happy New Year: Riesling Rosemary Poached Pears
As the year comes to an end and with it being the condensed holiday season (we don’t know about ya’ll, but we’re exhausted!), we’re looking for quick and easy recipes. Here’s a simple and elegant way to ring in the New Year with Riesling Rosemary Poached Pears.

Riesling Rosemary Poached Pears
4 bosc pears (peeled)
1 bottle riesling
1 large sprig rosemary bruised (additional rosemary sprigs for garnish if desired)
6 lightly crushed green cardamom pods
2/3-3/4 cups honey
1 tsp vanilla bean paste
Bring one bottle of riesling to a simmer adding 1 large sprig of rosemary (bruised), and the cardamom pods. Simmer until wine has reduced slightly. Add pears, honey (to taste), vanilla bean paste and simmer until pears are tender. Carefully remove the pears and let them cool slightly. Slice pears in half lengthwise and remove core. We like to serve the pears with whipped cream flavored with cardamom, and garnished with additional rosemary. They are also quite tasty with pound cake or other tasty buttery treats! If desired you can continue to boil the remaining liquid until wine has reduced to a syrup. Reserve for use in cocktails or serve with poached pears.
